Green beans with artichokes and sweet potatoes

This green bean, artichoke and sweet potato dish is a one-pot wonder — rich in fibre, full of flavour! Serve with quinoa or crumbled feta for a protein boost.

  • 2 tablespoons olive oil
  • 1 brown onion, chopped
  • 2 teaspoons Greek spice mix
  • 1 clove garlic, crushed
  • 2 tablespoons tomato paste
  • 375g green beans, trimmed
  • 280g jar marinated artichokes, drained and halved
  • 350g sweet potato/ kumara, peeled and chopped
  • 2 x 400g cans crushed tomatoes
  • 2½ cups reduced-salt vegetable stock
  • ¼ cup fresh parsley leaves, finely chopped

    1 Add oil to a large pot and cook onion and spice mix over medium heat for 8 minutes. Add garlic and tomato paste and cook for a further 2 minutes.

    2 Add beans, artichokes and sweet potato and coat in the onion mixture. Add tomatoes and stock and bring to a boil. Reduce heat to low and simmer for 30 minutes.

    3 Scatter with parsley to serve.

    Serving suggestion

    Serve with crumbled feta and cooked quinoa for extra protein and creaminess.
