

Vege spaghetti
Ingredients
- 75g dried spaghetti or other pasta
- spray oil
- 1 cup cherry tomatoes
- 1 cup broccoli florets
- 2 cups rocketarugulaX or spinach leaves
- 1 teaspoon chilli flakes
- 2 teaspoons grated parmesan
- ½ teaspoon extra virgin olive oil
- black pepper, to garnish

Instructions
1 Prepare pasta following packet instructions, saving a little pasta water. Spray a pan with oil and set over a medium-high heat. Add cherry tomatoes and broccoli. Cook for 2 minutes. Add spinach and chilli flakes. When pasta is cooked, drain and add to pan with reserved pasta water. Toss briefly and serve, or pack into a lunch container.
2 Serve with parmesan and olive oil and season with pepper.
