- For each person:
- oil spray
- 2 eggs
- 2 tablespoons trim milk or water
- dash salt and pepper
- filling of your choice

- Spray a frying pan with oil and set over a medium-high heat. In a bowl lightly beat eggs, milk, salt and pepper together, then pour mixture into pan. Pull mixture away from edges of pan using a spatula and let uncooked egg flow into the space. Do this until egg is just cooked through.
- Add filling of your choice to one half of the omelette. Fold over the other half using the spatula. Cook for a few more minutes, until filling is warmed through. Gently slide omelette onto plate to serve.
