Fresh lime cordial

  • 1 cup water
  • 1 stick lemongrass, white part only, bruised
  • 4 strips lime zest
  • 1 cup freshly squeezed lime juice (about 8-10 limes)

    1 In a small saucepan, heat sugar and water over low heat and stir until sugar is dissolved. Add lemongrass and lime zest and bring to the boil. Simmer for 5 minutes. Remove from heat and cool. Strain, then mix lime juice with syrup.

    2 To make up a non-alcoholic drink, mix 1 part cordial to 4 parts cold water or mineral water.

    3 To add some festive cheer, mix in 3 teaspoons of tequila to every 2 tablespoons (40ml) cordial and 2/3 cup (160ml) water. For 4 people, mix 2/3 cup cordial with 2 2/3 cups water and 1/4 cup of tequila.
