Roasted pears with cinnamon mascarpone

  • 4 tablespoons maple syrup
  • 3 tablespoons brown sugar
  • ¼ teaspoon ground cinnamon
  • ½ cup mascarpone cheese

    1 Preheat oven to 160°C. Place pears, maple syrup and 2 tablespoons of sugar in a bowl and toss to coat. Place in a baking dish and roast for 15 minutes or until pears caramelise.

    2 In a bowl, mix rest of sugar with cinnamon and mascarpone.

    3 Serve pears with a dollop of cinnamon mascarpone.

     

    Variations

    Use low-fat natural yoghurt instead of mascarpone, or serve pears with a scoop of low-fat vanilla ice cream with cinnamon sprinkled on top.

    Cinnamon mascarpone complements any dessert. Use instead of ice cream, yoghurt or cream. Serve with canned fruits such as peaches or apricots for a delicious instant dessert.
