Tangy soy mushrooms with noodles

  • 270g dried soba noodles
  • 1 tablespoon peanut oil
  • 1 medium leek, sliced
  • 4 cups (approx 300g) roughly chopped mushrooms
  • ¼ cup soy sauce
  • ¼ cup balsamic vinegar
  • ½ cup skim milk

    1 Cook  noodles according to packet instructions. Drain.

    2 Meanwhile, heat oil in a large non-stick frying pan or wok. Add leek and fry over a medium heat for 1-2 minutes. Add mushrooms and fry, stirring regularly, for 5-6 minutes, until golden. Add soy sauce and balsamic vinegar and fry for 1-2 minutes, until slightly reduced. Add milk and bubble for 30 seconds, then toss through noodles and serve immediately.

    HFG tip

    If you don't have a wok, use a really big frying pan for this otherwise the mushrooms will sweat instead of fry.
