Thai curry paste
- ½ onion
- 1 clove garlic, peeled
- 1 red or green chilli (or ½ if you like less heat)
- 2 kaffir lime leaves or 1 lime, zest
- 1 stalk lemongrass, sliced
- 2cm piece ginger, peeled
- 2 tablespoons roughly chopped fresh coriandercilantroX
- 1 teaspoon fish sauce
- 1 teaspoon sugar
- 2 teaspoons water
1 Put all ingredients in a blender or processor and blend to a smooth paste. If necessary, add a little more water for consistency.
