Tuna potato salad

This super easy tuna potato salad with a healthier mayonnaise dressing is ready in 5 minutes making it a great option to take to work.

Ingredients
Units: Metric | Imperial (US)
- 1 tablespoon mayonnaise
- 1 ½ tablespoons plain yoghurt
- 1 teaspoon Dijon mustard
- 1 cup (140g) cold cooked baby potatoes
- ½ red capsicum, diced
- 2 cups rocketarugulaX leaves
- 95g can jalapeño-flavoured tuna (or flavour of your choice)

Instructions
1 In a bowl combine mayo, yoghurt and mustard. Add veges and toss to coat. Add tuna and mix gently.
