Mediterranean-style salad

Crisp veggies, tangy feta, briny olives and golden bread tossed in olive oil – this Med-inspired salad is bursting with flavour and takes just 15 minutes to make.

  • 2 cups chopped bread
  • 3 tablespoons white wine vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 cup cubed feta or goats’ cheese
  • 3 ripe tomatoes, roughly chopped
  • 1 large chunk cucumber, roughly chopped
  • ½ cup (approx 12) black olives, pitted and halved
  • 2 tablespoons capers, roughly chopped
  • 1 really large handful fresh basil, roughly chopped or torn

    1 Put the bread into a bowl with the vinegar and olive oil. Toss to coat then add the cheese, tomatoes, cucumber, olives, capers and basil.

    2 Mix gently and serve at room temperature.
