Crumble-stuffed baked pears

  • 4 pears, peeled, halved
  • ⅓ cup almond meal
  • 1 tablespoon raw sugar
  • ½ teaspoon ground cinnamon
  • 1 tablespoon wholemeal flour
  • 1 tablespoon olive oil
  • 2 tablespoons currants
  • ¼ cup flaked almonds
  • 1 tablespoon liquid honey
  • 8 tablespoons reduced-fat Greek yoghurt

    1 Preheat oven to 180°C. Use a teaspoon to scoop out seeds and a little flesh from the centre of each pear half. Line a baking dish with baking paper and place pear halves inside.

    2 Combine almond meal, sugar, cinnamon, flour and oil in a bowl. Stir to combine. Stir currants and almonds into mixture.

    3 Spoon crumble mixture into pear halve centres. Bake pears in oven for 20-25 minutes until pears are tender and crumble mixture is golden.

    4 To serve, drizzle pears with honey and a dollop of yoghurt.

    Variations

    Make it dairy free: Don’t use yoghurt to serve.
