Family favourite salad
(at time of publication)
- 1 lemon, 2 tablespoons juice
- 1 teaspoon sugar
- 1 large avocado
- 4 firm red tomatoes
- 20cm-length telegraph cucumber
- 4 cups chopped lettuce
- 2 spring onions
- 2 tablespoons olive or canola oil
- salt and freshly ground pepper, to taste
1 Just before serving, in a large salad bowl mix lemon juice and sugar together. Stone and peel avocado then cut in 1cm cubes. Add to bowl and turn gently in lemon juice mixture.
2 Cut tomatoes and unpeeled cucumber in cubes. Add to bowl. Add lettuce and spring onions. Drizzle oil over salad and toss gently to mix. Season to taste with salt and pepper. Serve with Celebration salmon and Cubed roasted vegetables on the side.
