- 50g sliced rare roasted beef, chopped
- 1 small Roma tomato, diced
- 1/4 firm ripe avocado, diced
- 1 cup baby rocketarugulaX
- 1 tablespoon balsamic vinegar

1 Microwave brown rice following packet directions.
2 Place rice, roasted beef, tomato, avocado and rocket in a bowl. Season with freshly ground black pepper and add balsamic to taste. Gently toss to combine before serving.
