Chopped salad kit with chicken and salsa

Salad kits are a convenient addition to your fridge. In this recipe, we add chicken and fresh chopped veg to create a quick and healthy meal option for two.

  • 1 Chopped Salad Kit from the supermarket (we used Taylor Farms)
  • ¾ cup chopped grilled chicken breast
  • ½ red onion, finely diced
  • 1 Lebanese cucumber, diced
  • 2 tomatoes, diced
  • ½ avocado, cubed

    1 Open the Chopped Salad Kit and remove package with dressing and toppings. Evenly divide dressing into base of 2 x medium-size Mason jars.

    2 Next, divide the following items evenly between each jar, building from the base up: chicken, onion, cucumber, tomato and then the chopped salad vegetable base. Top with avocado cubes.

    3 Open toppings package and sprinkle evenly on both salads. Tightly seal jar lids and refrigerate until ready to eat.
