- 1 ½ cups finely shredded cabbage (red, white or a mix)
- 3 cups finely chopped broccoli
- 2 courgetteszucchini, summer squashX, grated
- 1 carrot, grated
- ¼ red onion, finely chopped
- 2 tablespoons chopped parsley
- 2 tablespoons balsamic dressing (2 parts balsamic vinegar to 1 part olive oil)
- freshly ground black pepper
1 Mix all ingredients together. Chill and serve.
