Single serve mixed berry oat crumble

Satisfy your sweet tooth with a warm, berry crumble topped with a light, toasted oat-and-almond crunch. It's the perfect "me-time" treat!

Ingredients

  • 2 teaspoons cornflour
  • pinch ground cinnamon
  • 1 cup frozen mixed berries, defrosted
  • 2 teaspoons lemon juice
  • 1 small scoop reduced-fat vanilla ice-cream, to serve

    • 2 tablespoons rolled oats
    • 1½ tablespoons plain flour
    • 1 tablespoon slivered almonds
    • 2 teaspoons caster sugar
    • 1 tablespoon reduced-fat spread

    1 Preheat oven to 180°C. In a bowl combine sugar, cornflour and cinnamon. Add blueberries and toss to coat. Add lemon juice and toss to coat. Place the berries in a single-serve ovenproof dish.

    2 Make oat crisp: In a bowl combine oats, flour, almonds and sugar. Add spread. Using fingertips, rub to combine. Scatter the oat mixture over the berry mixture. Bake pudding for 25 minutes or until golden and the filling is hot. Serve with vanilla ice-cream.
