- 1 cup flour
- pinch of salt
- 150ml trim milk
- 150ml water
- 1 egg
- oil spray
- 12 medium plums
- 4 tablespoons soft brown sugarlight brown cane sugarX
- ¼ teaspoon ground cinnamon
1 Use a blender or food processor to blend all pancake ingredients into a smooth batter.
2 Spray a non-stick frying pan with a little oil and heat. Cover pan base with batter and cook until set. Cook both sides until lightly golden. Make 6 pancakes. Keep warm.
3 Place plums in a pan with sugar and 2 tablespoons water. Heat gently until sugar is dissolved. Continue simmering until plums are tender. Sprinkle with cinnamon.
4 Serve plums with pancakes.
