- 4 cups chopped, uncooked rhubarb
- 5 tablespoons soft brown sugarlight brown cane sugarX
- 34g sachet Weight Watchers vanilla custard
- 2 x 150g vanilla fromage frais
1 Cook rhubarb for about 10 minutes in a non-stick pan with a little water (or for about 5 minutes in the microwave) until tender. Stir in sugar and leave to cool.
2 Make up custard following packet directions and add extra water to make a smoother custard. Cool for 5 minutes.
3 Mix rhubarb into custard then add fromage frais for a marbled effect. Spoon into serving bowls. Chill before serving.
This fool keeps for up to 2 days stored in the fridge in a sealed container.
