Rhubarb fool

  • Time to make: 30 mins, including cooling
  • Serving: 4 people (makes 4 generous serves)

  • 4 cups chopped, uncooked rhubarb
  • 5 tablespoons soft brown sugar
  • 34g sachet Weight Watchers vanilla custard
  • 2 x 150g vanilla fromage frais

    1 Cook rhubarb for about 10 minutes in a non-stick pan with a little water (or for about 5 minutes in the microwave) until tender. Stir in sugar and leave to cool.

    2 Make up custard following packet directions and add extra water to make a smoother custard. Cool for 5 minutes.

    3 Mix rhubarb into custard then add fromage frais for a marbled effect. Spoon into serving bowls. Chill before serving.
