

Blueberry and orange trifle

The blueberries in this quick and easy trifle recipe are full of antioxidising goodness, and using yoghurt, instead of custard and cream, makes it a healthier dessert alternative to traditional trifle.

- 8 sponge finger biscuits, broken in pieces
- ⅓ cup (80ml) fresh orange juice
- 2 tablespoons mixed berry jamjellyX, warmed
- 300g blueberries
- 1 ⅓ cups low-fat vanilla yoghurt

Instructions
1 Divide biscuits among 4 x 250ml-capacity serving dishes. Drizzle 1 tablespoon orange juice over each.
2 Combine jam and 1 1/2 cups berries and divide among dishes. Top each with 1/3 cup yoghurt. Sprinkle with remaining berries. Chill until serving.
