Sweet chilli and coconut sauce

- ¼ cup sweet chilli sauce
- ½ cup light coconut cream
- 2 tablespoons brown sugarlight brown cane sugarX
- 1 tablespoon fish sauce
- juice of 1 lemon
- 1 kaffir lime leaf, finely chopped (optional)
- 3 tablespoons chopped coriandercilantroX

1 Mix together all ingredients, then pour over 500g fish. Bake for 10-15 minutes, or until fish is cooked.
