Fresh tomato pasta sauce

Looking for a quick light meal that requires minimal cooking and practically no dishes? Here’s a clever idea using the Vitamix Total Nutrition Centre that makes the most of ripe, in-season tomatoes.

Fresh tomato pasta sauce

This lovely raw sauce is a great counterpoint to hot pasta – it’s extremely simple but tastes fantastic.

Serves 4
Time to make: 10 minutes

8 fresh, ripe tomatoes
1/2 clove garlic (optional)
1 spring onion
1/2 cup fresh basil leaves
2 tablespoons extra virgin olive oil
dash red wine vinegar
pinch salt
black pepper, to taste
2 tablespoons parmesan, to garnish
basil, to garnish
4 cups cooked pasta, to seve
4 cups colourful salad with 2 tablespoons vinaigrette, to serve

Step 1 Place all ingredients except parmesan into the Vitamix.

Step 2 Start on low and gradually increase speed, tampering down if necessary. Blend for about 20 seconds, until blended but still a little bit chunky.

Step 3 Serve sauce straight over hot pasta. Garnish with parmesan and extra basil.

Variations

  • Add canned tuna, salmon or cooked chicken to make a more substantial meal and add protein.
  • You could also try adding capsicum, olives, chilli, courgettes, mint or rocket – use your imagination!
