

Cucumber salad
Ingredients
- 1 telegraph cucumber, sliced
- 2 teaspoons reduced-salt soy sauce
- 2 teaspoons toasted sesame oil
- 1 teaspoon fish sauce
- 1 lime, zest and juice
- ½ small red chilli, sliced (optional)
- 1 teaspoon brown sugarlight brown cane sugarX
- 1 clove garlic, crushed
- 1 tablespoon kimchi
- 2 spring onions, sliced
- 1 tablespoon sesame seeds, toasted
- 1 tablespoon flaked almonds, lightly toasted

Instructions
1 Place all ingredients apart from sesame seeds into a large jar with a lid or a bowl. Shake or toss well to combine.
2 Serve immediately with seeds and almonds to garnish, or chill until ready to eat.
