4 simple healthy dinners that freeze well

A little bit of meal prep goes a long way and with these recipes you can stock up on healthy, tasty meals for your freezer to save time in the kitchen.

All you need to do is let them defrost before cooking when you’re ready to eat them.

1. Sweet potato/kumara and fishcakes with greens

Follow the method to step 3 then wrap the uncooked fishcakes in clingfilm and freeze for up to three months. When ready to use, defrost fully then continue with the method from step 4. The tartare sauce is not freezable.

2. Creamy Thai coconut-chicken meatballs

3. Pumpkin and red lentil soup

Once cooled you can freeze the soup, without the pumpkin seeds and yoghurt, for up to three months. When ready to use, reheat fully before adding the yoghurt and seeds.

4. Spicy bean and potato chilli

Follow the method to step 2 then let the chilli cool before freezing for up to three months. When ready to use, reheat on the hob before continuing with step three of the method.
