

Feijoa custard whip
Ingredients
- 2 cups feijoa flesh, diced
- ¼ cup sugar
- 2 tablespoons custard powder
- 1 ½ cups skim milk
- ¼ cup apple sauce
- 1 ripe banana, mashed
- 1 lemon, squeezed juice, to prevent banana browning
- 150g vanilla bean frûche yoghurt

Instructions
1 Place feijoas in a pan with sugar and bring to the boil. Reduce heat and cook for 4-5 minutes. Remove from heat and leave to cool.
2 Meanwhile, make up custard: mix custard powder with a little milk to form a paste. Heat remaining milk until almost boiling. Remove from heat and pour over paste. Return to pan and heat, stirring until thickened. Pour custard into a bowl and leave to cool.
3 Add three-quarters of the feijoas with apple sauce, banana, lemon juice and frûche to custard. Mix roughly. Spoon remaining feijoas into the base of serving glasses. Top with custard whip. Chill before serving, garnished with fresh mint if you prefer.
Variations
Make it gluten free: Check custard powder and frûche yoghurt are gluten free.
