Ginger slice

Ginger slice just got a whole lot healthier, without compromising on flavour. This low-cost ginger slice recipe is so easy to bake. Great for those morning tea shouts.

  • spray oil
    • 125g reduced-fat spread
    • ½ cup soft brown sugar
    • 1 ¼ cups wholemeal flour
    • ½ cup plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon ground ginger
    • ½ cup apple purée
    • ½ cup rolled oats
    • Topping
    • 1 tablespoon reduced-fat spread
    • ¾ cup icing sugar
    • 2 teaspoons ground ginger
    • 1 tablespoon liquid honey
    • 1 teaspoon water
    • ¼ cup crystallised ginger, chopped

    1 Preheat oven to 180°C. Lightly spray a baking tray with oil.

    2 In a large bowl combine spread and sugar and beat until creamy. Add the remaining ingredients and beat well. The mixture will be sticky. Spoon into prepared baking tray.

    3 Bake for 30-35 minutes until a skewer inserted comes out clean.

    4 To make topping, place ingredients in a pan and heat until combined. Allow mixture to bubble and quickly pour over slice base while slice is still hot.

    5 Sprinkle with crystallised ginger and cut in squares while still warm. Leave to cool in tray then place in fridge for 1-2 hours to set.
