- 1 x 50g slice sourdough bread, toasted
- ¼ cup crumbled goat’s cheese
- 75g thinly sliced papaya
- ½ tablespoon honey
- 1 tablespoon fresh mint leaves, shredded

Instructions
1 Spread sourdough with half the goat’s cheese. Top with papaya slices, then drizzle over honey. Serve scattered with remaining goat’s cheese and fresh mint leaves.

Fresh basil and coriander also pair well with papaya. Add a squeeze of lime juice for extra zest and flavour.
