

Spiced prawn crackers
Ingredients
- 1 tablespoon mild tandoori curry paste
- 5 tablespoons low-fat plain yoghurt
- 1 lime, finely grated zest
- small handful chopped fresh coriandercilantroX, plus extra, to garnish
- 300g prawns, cooked, peeled, roughly chopped
- 30 rice crackers
- 4 tablespoons mango chutney, lumps crushed
- lime wedges

Instructions
1 In a bowl mix curry paste, yoghurt, lime zest and coriander. Stir in prawns to evenly coat in mixture. Set aside to marinate.
2 Place a little prawn mixture on each cracker then transfer to serving plates. Top each with a blob of chutney and a coriander leaf. Garnish with lime wedges.
