Spiced prawn crackers

  • 1 tablespoon mild tandoori curry paste
    • 5 tablespoons low-fat plain yoghurt
    • 1 lime, finely grated zest
    • small handful chopped fresh coriander, plus extra, to garnish
    • 300g prawns, cooked, peeled, roughly chopped
    • 30 rice crackers
    • 4 tablespoons mango chutney, lumps crushed
    • lime wedges

    1 In a bowl mix curry paste, yoghurt, lime zest and coriander. Stir in prawns to evenly coat in mixture. Set aside to marinate.

    2 Place a little prawn mixture on each cracker then transfer to serving plates. Top each with a blob of chutney and a coriander leaf. Garnish with lime wedges.
