

Green goodness wellness bowl
Ingredients
- ½ cup brown basmati rice
- 2 hard-boiled eggs, cut into wedges
- 50g reduced-fat cheddar, cubed
- 1 cup green beans, chopped and blanched
- ½ avocado, sliced
- 1 cup chopped tomatoes
- 1 carrot, julienned or spiralised
- 1 small radish, finely sliced
- ½ cup toasted almonds, roughly chopped
- 2 heaped tablespoons hummus
- 2 tablespoons Green goodness buttermilk dressing

Instructions
1 Cook rice according to packet instructions.
2 Divide rice between two serving bowls. Arrange eggs, cheese, vegetables and nuts over rice. Top with hummus and drizzle over dressing.
