Moroccan carrot salad

- 4 medium carrots, peeled, grated
- ½ red onion, thinly sliced
- 2 tablespoons currants
- ¼ cup chopped flat-leaf parsley
- ⅓ cup lemon juice
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1 teaspoon ground cumin
- 1 teaspoon ground coriandercilantroX
- freshly ground black pepper
1 In a bowl gently toss together salad ingredients.
2 In a separate bowl whisk together dressing ingredients. Just before serving, toss dressing through.
