Spicy beef sticks with mashed potato

  • 500g lean beef mince
  • 1 onion, finely chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon cumin
  • ½ teaspoon chilli power
  • 8 bamboo skewers, soaked in water to prevent burning
  • 4 desiree potatoes, peeled
  • ¼ cup skim milk
  • 1 tablespoon reduced-fat spread
  • steamed broccoli and carrots to serve

    1   Preheat chargrill. Combine mince, onion, oregano, cumin and chilli. Divide into 8 even portions. Use your hands to shape each into a smallish sausage shape.

    2   Insert a skewer through the meat and squeeze firmly to secure. Chill until ready to use.

    3   Boil potatoes until tender, then mash, adding milk and spread, until smooth.

    4   Cook skewers for 7 minutes, turning frequently, or until cooked. Serve with mashed potato and steamed veges.

    Another great recipe to mix and match; beef mince can be replaced with chicken, lamb or pork mince for variety.
