

Strawberry compote

- 2 chips strawberries
- 4 tablespoons castor sugar
- zest of 1 lemon
- juice of 1 orange
- ¼ cup water

Instructions

1 Remove stalks and halve large strawberries (leave small ones whole).
2 Combine water, juice and sugar in a large pot over a moderate heat. Stir until sugar is dissolved.
3 Add strawberries and lemon zest, and heat gently just until the berries start to release their juice. Remove from the heat and set aside in a bowl to cool.

This is a great make-ahead dessert to serve with cream, ice cream, or try it with lemon flavoured yoghurt.
