Avocado, cucumber and lime cream dressing
(at time of publication)
- 1 ripe avocado
- ½ cup low-fat plain yoghurt
- 1 cup seeds removed, chopped cucumber
- 2 tablespoons lime juice
- ¼ cup fresh coriandercilantroX
- black pepper, to taste
1 In a blender or food processor, blitz all ingredients well to make a smooth, creamy texture. Taste and add extra lime juice or pepper if desired. This dressing will keep for two days in the fridge.
