Ingredients
- 1 cup wholegrain rolled oatsoatmeal uncookedX
- ½ cup apple juice
- ½ cup shredded coconut
- 1 cup flour
- ¼ cup maple syrup
- ¼ cup canola oil
- 1 tablespoon peanut butter
- ½ teaspoon baking soda
- 1 tablespoon boiling water

Instructions
1 In a bowl, place oats and juice. Leave to soak for at least 1 hour. Add coconut and flour to soaked oats.
2 Preheat oven to 150°C and line an oven tray with baking paper.
3 In a saucepan, heat maple syrup, oil and peanut butter over medium, until combined.
4 In a cup, stir baking soda into water and pour into maple syrup mix.
5 Pour wet ingredients into dry ingredients and stir until well combined. Add a little water if needed to achieve rolling consistency.
6 Place spoonfuls of the mix onto prepared oven tray and place in hot oven. Cook for 15-20 minutes, or until golden brown. Allow to cool on oven tray before eating.
