Cheesy courgette boats

  • 4 medium courgettes (also called zucchini), halved
    • 1 large carrot, grated
    • 100g shaved lean ham, finely chopped
    • 4 tablespoons grated tasty cheese

    1 Preheat oven to 180ºC. Scoop out courgette flesh. Set aside.

    2 Place a single layer of courgette ‘boats’ in a baking paper-lined oven dish. Fill boats with carrot, courgette flesh and ham. Top with grated cheese.

    3 Bake for 30 minutes or until cheese is melted and courgette is cooked through. Let cool for 5 minutes. Serve with carrot sticks, cherry tomatoes and crusty bread.

    Make it gluten free: Check your ham is gluten free.
