In France, where the dish originated, parfait is made by boiling cream, egg, sugar and syrup to create a custard-like puree. We've made a healthier version by using low-fat custard and no added sugar.

HFG tip

We used Ernest Adams unfilled sponge with 3.6% fat. Use a similarly low-fat sponge.
