Cinnamon and mixed spice poached apples

  • 6 gala apples, peeled, stalks intact
  • 1 orange, sliced
  • ½ cup sugar
  • 1 cinnamon stick, broken in half
  • 1 ½ teaspoons mixed spice
  • 2 cups white wine
  • 1 vanilla pod, split in half

    1 Place apples in a pan with remaining ingredients and 2 cups water. Bring to the boil. Lower heat and poach apples for 25 minutes or until they are cooked through.

    2 Remove apples and orange from liquid. Bring syrup to the boil and heat for 10 minutes until reduced and syrup-like.

    3 Serve apples with orange slices and syrup.

    Serving suggestion

    Add a dollop of yoghurt.

    Make it gluten free: Check mixed spice is gluten free.

    These apples can be prepared ahead and then stored in the fridge for 1 day. Store the apples and syrup separately in sealed containers.
