Cookie berry tarts

  • 8 chocolate-chip cookies
    • ⅓ cup (80g) extra-light cream cheese spread, room temperature
    • 3 teaspoons icing sugar
    • 150g strawberries or other fresh fruit, chopped
    • 100g blueberries

    1 Preheat oven to 180ºC. Place cookies on a baking tray. Bake for 5 minutes or until softened then press into base of muffin-tin holes. Stand for 10 minutes or until cold and firm.

    2 Meanwhile, combine cream cheese and icing sugar. Spoon mixture into cookie bases and top with a few berries. Serve the remaining berries alongside tarts.

    Variations

    Make it gluten free: Use gluten-free cookies and check icing sugar is gluten free.
