

Fennel, apple and cos slaw with seeded mustard dressing

You'll love this light and crunchy slaw. It's low in calories and is a healthier vegetarian option to a traditional creamy coleslaw. Try it with your choice of protein.

Ingredients

- 80g (¹⁄³ cup) reduced-fat plain yoghurt
- 2 tablespoons lemon juice
- 2 teaspoons wholegrain mustard
- ½ teaspoon maple syrup
- 1 large fennel bulb, thinly sliced
- 1 red apple, cut into matchsticks
- 2 baby cos lettuce, leaves shredded
- ½ cup loosely packed chopped fresh herbs (such as dill and parsley)
- ¼ cup pecan nuts, roughly chopped

Instructions
1 Place yoghurt, lemon juice, mustard and maple syrup in a small bowl, whisking to combine.
2 Place fennel, apple, lettuce, fresh herbs and chopped nuts in a large serving bowl. Pour over dressing, tossing to combine. Serve immediately.
