Fish burgers with avo salsa

  • 1 cup cherry tomatoes
  • 1 sachet (100g) ready-made guacamole (we used Fressure — Spicy) or ½ avocado, mashed, with ¼ cup chopped fresh coriander
  • spray oil
  • 400g tarakihi fillets
  • To serve
  • 4 wholegrain rolls
  • 2 cups iceberg lettuce, shredded
  • 2 carrots, grated

    1 To make salsa, combine tomatoes and guacamole.

    2 Heat a non-stick frying pan with oil spray and fry fish until cooked.

    3 To serve, divide fish among rolls, add lettuce, carrot and top with salsa.

    Variations

    Make it gluten free: Use gluten-free bread rolls.
