This Mediterranean bowl is an easy and healthy way to use up leftover lamb for a quick and tasty meal for one.

- ½ cup cooked red or brown rice
- 120g cooked leftover lamb steak, sliced
- 1 cup green salad leaves (spinach, rocketarugulaX, lettuce)
- ½ capsicum, sliced
- ½ cup sliced cucumber
- 3 olives, pitted and sliced
- 2 tablespoons low-fat plain yoghurt
- 1 tablespoon chilli sauce
