Microwave tutti fruity s’mores

Here's a fun dessert that the kids can make - a healthier take on the traditional version of s'mores.

  • 4 Huntley & Palmers Sesameal crackers
  • 2 teaspoons cocoa powder
  • 2 teaspoons maple syrup
  • ½ banana, mashed
  • 3 dried apricots, chopped
  • 24 mini marshmallows (6 mini marshmallows per s’more)

    1 Place the crackers on a board. Mix cocoa powder with maple syrup to make a paste. This suddenly turns runny after initially being very stiff.

    2 Spread the paste over the base of the crackers. Top each cracker with some banana then add some apricots.

    3 Divide marshmallows among crackers, sticking them to the cocoa paste and banana. Press down slightly.

    4 Place on a microwave-proof plate and heat for 20 seconds, or until the marshmallows have puffed slightly and become gooey. Serve immediately.

    Variations

    Make it vegan: Use vegan marshmallows. Check crackers are vegan.

    Timings will vary depending on the power output of your microwave. These timings were based on a 1100 watt output.
