Onion and date herby stuffing

  • 1 small onion, finely chopped
  • 4-5 teaspoons olive oil
  • 2 cups fresh breadcrumbs
  • ½ teaspoon dried mixed herbs
  • ½ cup dried dates, chopped
  • salt and pepper

    1 Heat the oil in a pan and sauté the onion for 5 minutes until softened. Mix with the breadcrumbs, herbs and dates. Season.

    2 Transfer to an ovenproof dish and bake in a preheated oven for 15-20 minutes until tinged golden. Serve with the roast of your choice.
