Volcano with lava (turmeric chicken with mashed potato)

  • 4 medium potatoes
  • 400g chicken (schnitzel or tenderloins are great)
  • 1 ½ cups chicken stock
  • ½ teaspoon turmeric
  • 3 tablespoons lite cream cheese
  • 3-4 cups vegetables, fresh or frozen

    1 Peel and boil potatoes, then mash.

    2 Cut chicken into bite-sized pieces. Simmer chicken gently in chicken stock. Once cooked through (7-10 minutes), add turmeric and 3 tablespoons of lite cream cheese to make a sauce (adjust turmeric for colour and flavour).

    3 Stir-fry or microwave veges.

    4 To assemble, make a mashed potato mountain, spoon chicken into the middle and pour the yellow sauce over the top, put veges around the 'volcano'.
