

Baked bean pizza

Ingredients
- 4 tortillas
- cooking spray oil
- 420g can baked beans
- ½ cup grated edam cheese
- 4 tablespoons reduced-fat sour cream
- ½ avocado, cubed
- 1 red onion, sliced (optional)
- 1 cup chopped fresh coriandercilantroX

Instructions
1 Heat grill to medium. Place tortillas on a baking tray. Spray with oil. Grill, bottom side up, for 2 minutes or until brown. Remove from grill, flip tortillas over and top with beans. Sprinkle with cheese. Place under grill until cheese is melted and golden.
2 Transfer tortillas to plates. Top each tortilla with sour cream, avocado, red onion and coriander. Eat with a knife and fork, or eat slices with your hands!
Variations
Try using flavoured beans on your pizza for a tasty change.

Sorry, but I can’t think of anything more disgusting! Surely HFG can have healthy meals as well as pleasing to the eye. After all, you do eat with your eyes first!

Thanks for your feedback. This is a simple recipe, which kids love, and is a fun way to enjoy the goodness of baked beans. In NZ, having canned spaghetti on pizza is not uncommon, so this is a healthier take on that idea. You could try adding a couple of poached eggs and having it for brunch, if that helps reframe it. I think you’ll find we have plenty of other recipes that are very pretty to look at, so I hope you find something that suits you better.
