

Beef tataki salad

Ingredients
- 2 tablespoons salt-reduced soy sauce
- 1 lemon, zest and juice
- 1cm fresh ginger, peeled, finely grated
- 2 carrots, peeled, finely grated
- 270g soba noodles
- spray oil
- 500g sirloin steak
- 2 cups cooked broccoli
- 2 spring onions, finely sliced
- 2 cups baby spinach

Instructions
1 Combine soy sauce, lemon zest and juice and ginger in a bowl. Add carrots and marinate.
2 Cook noodles following packet directions. Drain once cooked.
3 Spray a large non-stick skillet with oil and heat until hot. Cook steak until medium-rare – for about 2-3 minutes each side. Rest steak on a cutting board for 5 minutes.
4 Wipe skillet and re-spray with oil. Add broccoli and onions and cook for a few minutes over a medium heat. Add carrot and marinade mixture for a final minute.
5 Thinly slice beef. Place noodles on a serving dish then top with onions, broccoli and carrots and mix through spinach or serve spinach on the side if you prefer. Top with beef slices.
