Caramelised oranges with passionfruit yoghurt
- ½ cup packed brown sugarlight brown cane sugarX
- 50g reduced-fat spread
- 4 oranges, peeled, sliced
- ½ cup low-fat plain yoghurt
- 1 tablespoon passionfruit pulp
- fresh mint, to garnish
1 Combine sugar and spread in a frying pan. Cook for 2 minutes over a medium-high heat. Add oranges and cook for 2-3 minutes. Remove oranges from pan and set aside. Cook syrup for 5 minutes or until thickened.
2 Combine yoghurt and passion fruit. Divide orange slices among plates and drizzle with syrup. Serve with yoghurt and garnish with mint.
