Everybody’s chocolate fudge pudding

  • 1 cup brown rice flour
    • ¼ cup cocoa
    • 1 heaped teaspoon gluten-free baking powder
    • ¼ teaspoon baking soda
    • ½ cup brown sugar
    • 1 egg
    • 1 cup buttermilk
    • 2 tablespoons nut or vegetable oil
    • ½ teaspoon vanilla essence
    • spray oil
    • Sauce
    • ½ cup brown sugar
    • ¼ cup cocoa
    • 2 ½ cups boiling water

    1 Preheat oven to 175°C. In a large bowl sift together rice flour, cocoa, baking powder and baking soda.

    2 In a separate small bowl whisk sugar and egg together until creamy. Fold in buttermilk, oil and vanilla.

    3 Make a well in the centre of dry ingredients and add egg mix. Slowly stir together until well mixed. Grease a shallow 1.2L ovenproof dish with oil spray. Transfer pudding mix into dish and smooth top to level.

    4 To make sauce, in a small bowl whisk together sugar and cocoa. Add boiling water. Mix to dissolve and pour over pudding. Bake for 20 minutes or until cracks appear on top.

    Serving suggestion

    Serve with a poached tamarillo and low-fat plain yoghurt.

    HFG tip

    To poach tamarillos, simply mark a cross in the base of the fruit and place in a small bowl. Cover with boiling water from the kettle. Leave for a minute. Drain away liquid and peel off the skin. Leave stalk intact. In a small saucepan place 3 tablespoons sugar in 1/2 cup water. Bring to the boil, add tamarillos and simmer for 5 minutes.

    Remember, dishes like this are an occasional treat rather than everyday meals.
