Fruit salad parfaits
Ingredients
- ¾ cup reduced-fat Greek-style yoghurt
- ¹⁄³ cup diced fresh fruit (we used diced rockmelon, strawberries, banana, kiwifruit, plus mandarin segments and star fruit slices to garnish)
- ¹⁄³ cup granola
- fresh mint leaves, to garnish
- 1 teaspoon goji or freeze-dried raspberries to garnish (optional)

Instructions
1 In a small glass or jar, layer half the Greek-style yoghurt with half the granola and chopped fruit.
2 Repeat and garnish with fresh mint and goji or freeze-dried raspberries, if using.
