

Mediterranean-style salad
Ingredients
- 2 cups chopped bread
- 3 tablespoons white wine vinegar
- 3 tablespoons extra virgin olive oil
- 1 cup cubed feta or goats’ cheese
- 3 ripe tomatoes, roughly chopped
- 1 large chunk cucumber, roughly chopped
- ½ cup (approx 12) black olives, pitted and halved
- 2 tablespoons capers, roughly chopped
- 1 really large handful fresh basil, roughly chopped or torn

Instructions
1 Put the bread into a bowl with the vinegar and olive oil. Toss to coat then add the cheese, tomatoes, cucumber, olives, capers and basil.
2 Mix gently and serve at room temperature.
