Mini Thai beef burger skewers
Ingredients
- 12 small skewers
- 1/2 red onion, finely chopped
- 200g lean beef mince
- 2 teaspoons red curry paste
- 1 tablespoon chopped fresh coriandercilantroX
- 2 slices reduced-fat or edam cheese, cut into six squares
- 4 lettuce leaves (we used baby gem)
- 12 slices dill pickle
- 6 cherry tomatoes, halved
- tomato relish, to serve (optional)
- aioli, to serve (optional)

Instructions
1 Spray a small frying pan with oil and cook onion over medium heat for 3-4 minutes.
2 In a bowl combine onion, mince, curry paste and coriander. Shape mixture into 12 small patties, about the size of a falafel ball.
3 Spray same frying pan with oil and cook patties over medium heat for 2-3 minutes, until browned. Flip patties and top cooked side with cheese slice. Cook remaining side for 1 1/2-3 minutes until cooked to your liking.
4 To assemble burger skewers, carefully slide a cooked patty onto each skewer. Divide lettuce leaves evenly among skewers. Top with a pickle slice and a cherry tomato half.
5 Serve with tomato relish and/or aioli, if desired.
